Most vegetables contain more nutrients per calorie than any other food and are rich in all necessary amino acids. For example, romaine lettuce is a rich powerhouse with hundreds of cancer-fighting phytonutrients that protect us from a variety of threatening illnesses. Being healthy and owning a disease-resistant body is not luck; it is earned.

Vegetables used to be a side dish at dinner. Now vegetables are a core part of most of our meals starting with breakfast: Pumpkin in our waffles, sweet potato and zucchini in muffins, or carrots in our oatmeal. And even when meat/fish is part of our dinner, they are more of a side dish with vegetables taking up the larger part of the plate.

Fruits and vegetables are the two foods with the best correlation with longevity in humans. The National Cancer Institute recently reported on 337 different studies that all showed the same basic information:

  • Vegetables and fruits protect against all types of cancers if consumed in large enough quantities…. The most prevalent cancers in our country are mostly plant-deficiency diseases.
  • Raw vegetables have the most powerful anti-cancer properties of all foods.

Whether you eat a vegetarian diet or include a small amount of animal foods, for optimal health you must receive the majority of your calories from unrefined plant foods. It is the large quantity of unrefined plant foods that grants the greatest protection against developing serious disease.

I discovered when I began shopping at our local farmer’s market, that not only did vegetables taste better, but it’s also a way to put my money where my mouth is in advocating for a better planet. It’s a mutually beneficial relationship – buying from local farmers helps keep them in business and they are able to continue growing seasonal vegetables with greater flavor and nutritional value.
