Ingredients

baby spinach

red or yellow bell pepper

sun-dried tomatoes
diced

fresh basil

garlic
minced

teaspoon

teaspoon
black pepper

large eggs

milk
1/4
cup
cheese
shredded
Instructions
Preheat oven to 375 degrees. Brush a baking dish with butter or olive oil.
Combine all vegetables, garlic and pepper. Add optional meat and mix well. Pour into casserole dish.
Whisk eggs with milk and pour over vegetables.
Top with cheese
Bake for 50 – 55 minutes or until eggs are cooked through.
