Ingredients

beet greens
or parsley, chopped
Lime vinaigrette

teaspoon
salt
1/4
cup
lime juice
fresh

water
1/3 – 1/2
cup
extra-virgin olive oil
1/4
teaspoon
pepper
Instructions
Place salt in small bowl, add lime juice and whisk until salt dissolves. Mix in water.
Pour olive oil in a stream into the bowl whisking the whole time to emulsify.
Adjust salt and pepper to taste.

*If you don’t have limes, you can use apple cider vinegar
