Vegetables used to be a side dish at dinner. Now vegetables are a core part of most of our meals starting with breakfast: Pumpkin in our waffles, sweet potato and zucchini in muffins, or carrots in our oatmeal. And even when meat/fish is part of our dinner, they are more of a side dish with vegetables taking up the larger part of the plate.
