Day Before
- Make and bake Easter Fruit cookie: I used the whole-wheat sugar cookie dough from Carrot-Shape Sugar Cookies
- Make a cream cheese frosting for Easter Fruit Cookie using 6 ounces cream cheese, 2 tablespoons plain Greek yogurt and 1/4 cup powdered sugar
- Roast red bell peppers for Roasted Cod with Red Bell Pepper Tomato Sauce and make sauce
- Prep oranges, black olives and green onion for salad
- Make CMF Basic Salad Dressing if it’s not already on hand
Day of
- Make rice
- While rice is cooking make red bell pepper sauce it it’s not already made
- Make salad
- Place red bell pepper sauce in baking dish and place fish on top. Bake fish
- Spread cream cheese frosting on Easter Fruit Cookie
- Have the children help put the fruit on the Easter Fruit Cookie
