Baked Huminta
A traditional corn dish from my hometown of Cochabamba.
To make it spicy, add an additional 1 teaspoon red pepper flakes.
Ingredients
- 8 cups corn defrosted from frozen
- 1/4 cup butter melted plus extra for buttering the baking dish
- 1 cup cheese grated (I use a mix of mozzarella and Parmesan)
- 3/4 teaspoon salt
- 1 teaspoon anise seeds
- 1/2 teaspoon red pepper flakes
