We had a houseful of cousins with their families, a glorious way to celebrate Mother’s Day! This menu was simple enough that it came together quickly without anyone spending hours in the kitchen, yet the food was bountiful and enjoyed by all.

Not just for Mother’s Day, you can use this menu if have an extended family get-together or want to enjoy a Saturday or Sunday morning with friends. The blueberry French toast is popular with people of all ages. Add bowl of grapes, a and tray of sliced oranges to put more color and vitamins on the table.
Preparation Guide
- A week or at least three days before purchase all groceries
- Evening before
- Set up drink station and buffet table
- Set table
- For salmon: Cook 3 – 4 hardboiled eggs, cool and chop finely, also finely chopped 1/2 cup or red onion
- Prep Baked Blueberry French Toast
- Make Blueberry Syrup for Baked Blueberry French Toast
- Cook edamame, cool and place in covered container in refrigerator
- Make salad dressing
- Morning of
- Place salmon on a platter, put chopped eggs, chopped onions and capers in servings bowls
- Cut bagels in half and place in breadbasket, place cream cheese in small serving bowl if desired
- Make Watermelon Lemonade, put in refrigerator
- Finely slice kale/escarole if using those greens and prep the salad by tossing all ingredients together
- Make Raw Chocolate Mousse
- Before serving (about 40 minutes before)
- Preheat oven to 250. Bake Blueberry French Toast. Let sit for 5 -10 minutes before cutting into serving pieces
- Arrange all food on buffet table
- While Blueberry French Toast is cooling, toss salad with salad dressing
